Ok, so don’t hate me forever…I am saving this week’s “Meg Makes It On Monday” for Tuesday. It’s going to be a really good one though — sweet potato soup! I can’t wait to try it. So why did I not make it tonight? Well friends, the past two days have been really rough for me. While some pregnancy symptoms (i.e. all-day nausea) have packed their bags and moved on, I now have a new and mean-spirited visitor: round ligament pain. Basically, my uterus is expanding to make room for our growing baby, and all the stretching and pulling going on in there is causing horrible shooting pains, and at times, it feels like my insides are being squeezed like a lemon. Ouch!

I called my doctor today to calm all my irrational fears (what if all this pain is because something is wrong with the baby?!), and it seems that what I’m going through is perfectly normal. As long as there’s not any symptoms associated with the aches — fever, chills, spotting, etc. — everything is A-OK. Good news, but unfortunately, I was told there’s really nothing I can do to ease the pain. And trust me, I’ve tried! Last night, I did Summer Sanders prenatal workout to try to stretch out and took regular Tylenol (which is on my approved medicine list), but to no avail. I did tough it out at work today, and went to the grocery store tonight, but I could barely make it through the aisles I was so uncomfortable. So no soup for us tonight, since I’ve decided to take it easy and rest, but hopefully tomorrow will be a better day.

On a happy note, I did achieve my goal of working out 5 days last week! Yay for me! I was going to reward myself with shoes, but I saw something at the store tonight that seemed to be just the thing I need right now:

I can’t wait to fill up the tub and soak in some of this mineral bath. It smells so good, too! (And no, I was not compensated or asked to endorse this product. Ok, FTC?)

And a big shout out goes to my husband for starting his own weight loss plan today! He wants to lose 25 pounds by August, and joined Sparkpeople.com to track his calories. I’m so proud of him — love you, honey!

Have a wonderful week, everyone!

Good mornin’! Do you have big plans on this fine Saturday? The husband and I (when he finally gets his bones out of bed, that is) are going to do some shopping today for a very special person: my mom!

This gorgeous woman is having a birthday tomorrow, and only the perfect gift will do for one of my best friends! Luckily, my mom is a lady who knows what she wants, and has already dropped some hints on present ideas for us. I have to say, I am definitely just like her on that one (and in many other ways!) — my Christmas list had the exact link to a pair of boots I wanted, with color specified. Ha Ha!

I may have to do a little shopping for myself today as well. As pregnancy goes, my clothes are starting to get, well, snug. My shirts and jeans are fine, but a lot of my business pants are getting tight in the waist. They still zip and button, but I feel like I have a muffin top 24/7. I’ve read that this is perfectly normal at the stage I’m at in my pregnancy, so I’m going with it. Won’t be long until I’m browsing the maternity section…yay!

I figured I better eat a good breakfast that would get me through all this retail running around, so I made an amazing bowl of oats:

In the mix:

1/2 each of organic oats, low-fat milk and water

dash of salt

one small banana

tablespoon of all-natural peanut butter

1/2 cup blueberries

Scoop of Living Harvest Hemp Protein Powder

So yummy, and I am super full! I also had a mug of plain tea, and my “horse” pill. Ha!

This huge green pill is my prenatal vitamin, and the white is a Vitamin D supplement. (I found out last year I was deficient in D.) I’m actually going to pick up a prescription for a new prenatal that has more D in it today, and they aren’t as big as these!

A nutritious morning meal!

I better get moving if I want to get in a workout before heading out to the mall. I think today is going to be Summer Sanders Prenatal Workout DVD. It’s a good one!

Have a wonderful Saturday!

I love breakfast food. And having it at dinner time just makes it taste even better to me. I also love pizza, and when contemplating what to make for our evening meal, I thought, why not marry the two into one delicious, healthy dish? Hence, egg white pizza was born.

I needed a “crust,” so I whisked 6 egg whites in a bowl (a little yolk ended up in the mix, hence the yellow color), added a dash of salt and pepper, and put the liquid in a saucepan on medium-high heat. (I sprayed the pan first with cooking spray.)

The husband was in charge of flipping, and he cooked the eggs just enough to have the outside done, but still slightly under done in the middle since we were going to put this in the oven. We did this times 2 so we both had a personal pie.

Once the eggs were cooked, he put them on a sprayed baking sheet, and I added sauce — two tablespoons of sundried tomato spread. Pizza or tomato sauce should work as well, but this spread gave the pizza a wonderful, rich flavor.

Then came the toppings! Of course you can change these out for your own favorites, but I highly recommend the prosciutto. Delish!

(Note: I have read on several reputable pregnancy sites that pregnant women can eat deli meat, as long as it is heated until steaming hot. However, I am not a health professional, so if you are pregnant and have concerns about certain foods, consult your physician.)

1/4 cup prosciutto

chopped green pepper

chopped mushrooms

a few sprigs cilantro

spinach

1/2 cup monterey jack cheese

Ready for the oven! Mine is on the left; JD’s on the right. Doesn’t the egg look like crust?!

We broiled these in a 500 degree oven for 5-7 minutes. The cheese was perfectly golden and bubbly. Mmm…

The finished product!

JD and I were a little weary about how this would taste, but we both loved it! I think this would be a great brunch dish to share with family or friends. The whole pie was about 420 calories. Almost half of that was for the cheese, so you could always use a lower-calorie variety or less of it if you want to cut the calories down a bit. But 420 isn’t bad for dinner, and it is super filling! I almost couldn’t finish it.

Hope you enjoy!

***

On an exercise note, I don’t get a reward for last week. I didn’t work out on Saturday or Sunday, because I basically spent most of my time sleeping or trying to keep my food down. (Seriously, I ate almost half a sleeve of Saltines last night to tame the nausea, then fell asleep in a cracker stupor. Baby sure loves the carbs!)

I felt a lot better today, so I started the week off right by working out for almost an hour — hooray! I did Summer Sanders Prenatal Workout DVD, and I really like it! It was about 55 minutes of light cardio, strength training and even some yoga moves. I’ll definitely be adding it to my exercise regimen.

I have a very dirty kitchen calling my name, so I guess I better go for now. I hope you all have a wonderful, healthy week!

…but I’m good and toasty after a workout! My first “real” one since Saturday, to be exact. (I did go for a short walk on Sunday, but don’t really count that as anything more than good quality time with the husband and puppy.) I managed to keep my peanut butter on toast snack down and eyes open for a 30-minute cardio challenge on the elliptical, PLUS squats, lunges, and several reps of curls for the ol’ arms. I feel fantastic and proud! See?

(Please excuse the colossal bump that has decided to set up camp on my cheek. I’m hoping a little facial exorcism performed by Mary Kay this evening will do the trick.)

I don’t want to just rely on the elliptical on the really cold winter days, so tonight, I found some new friends on Amazon.com. (Sorry, Jillian!)

These DVDs got rave reviews, and I like that they customize the exercises for each trimester. Now I don’t have to worry that I’m doing the wrong workout and jostling the baby! Peace of mind is always a good thing.

We are crossing our fingers and toes for a snow day tomorrow. It doesn’t come easy in the South, but maybe we’ll see some flakes in the morning.

Any good workout DVDs you are currently doing? Do you stay indoors, or brave the cold to get good exercise?

On a very special note, I’d like to wish my niece, Elizabeth, a VERY happy 4th birthday today! Aunt May-May loves you bunches!
