Organic eats…and treats!

Whew…am I full! The husband made us an awesome, fresh and mainly organic dinner tonight, and this preggo lapped up every bite. The stars of the show were more veggies from our garden. I am so pleased with how well our plants have done. It has definitely saved us a lot on our grocery bill, and you just can’t compare the taste of a tomato fresh from the vine to one from the grocery store. Forget about it!

We have been grilling a lot lately, mainly to keep the heat out of the house, and tonight was dubbed hot dog night. We saw organic, nitrate-free franks at Earth Fare and thought we’d try them out. Add an organic green salad with homegrown tomatoes and cucumbers, and an ear of our latest crop — corn! — and you’ve got an awesome, healthy summer meal.

What toppings do you like on your hot dogs? I love raw chopped onions on mine, plus organic ketchup and mustard. We bought some whole wheat buns at Earth Fare that are so delicious — soft and flavorful, and no artificial ingredients. I even ate one by itself with a salad last night for dinner. Ha ha!

I’ve been feeling so much better now that JD and I have been stocking up on more organic foods. I also cut out all artificial sweeteners when I found out I was pregnant, and I can definitely feel a huge difference. I rarely have headaches like I used to, and my skin looks and feels a lot healthier. No Diet Cokes in my future! :)

Speaking of drinks, I’ve been craving slushies like mad this past week. I did give in and get a lemon real fruit slush from Sonic, but then I thought about all the crap and sugar that’s in it, and decided to make my own. So into the blender went several handfuls of ice, some Simply Lemonade (made with all-natural ingredients) and a bag of these:

And down the hatch it goes! Real ingredients, and around 100 calories for an 8-ounce glass. JD REALLY  liked these…I think he polished off the rest of the mix within a day. Ha ha!

So what else? Well, I went to see my doctor yesterday, and I found out I’m slightly anemic. From what I understand, it’s pretty common in pregnancy because of the increased blood supply the baby needs. I have to get my iron count up by my 36th week of pregnancy (tomorrow I’m 32 weeks), or I have to start taking pills. So lots of dark, leafy greens, beans and a little more red meat will be incorporated into more of our meals. Even if that means turning on the stove. :)

I am so psyched that this weekend is a long one! My brother-in-law is going to paint the nursery for us Saturday, and Sunday, we’re having a 4th of July BBQ with our families. I still can’t believe the year is half over…and that I’m going to be a mom in 8 weeks!

A chip in the road

I woke up to gorgeous blue skies on Day 3 of our trip to Gatlinburg, Tenn., and a rumbling tummy! The husband and I decided to make breakfast for everyone. Or should I say JD did, because he did all the cooking while I relaxed on the couch with a mug of hot chocolate topped with marshmallows. He’s the best!

A morning feast was soon on the table — scrambled eggs with cheese, sausage, bacon and buttered toast. The meat smelled so delicious, but since it wasn’t nitrate-free, I substituted half a grapefruit instead. I needed the Vitamin C anyway to help cure my cold!

After breakfast, we played Bash Party for Wii so long, it got to be lunch time! (Yeah, it is that fun.) I fixed myself a nitrate-free hotdog with a couple of spoons of leftover chili, sprinkle of cheese, pickled relish and a dabble of mustard. For a little more Vitamin C, I had orange slices on the side.

We finally headed into Pigeon Forge, an ajoining town to Gatlinburg, to check out the sites there. My sister and bro-in-law got brave and wanted to try out this ride that made me want to pee my pants just looking at it. It turned you around in circles going 70 miles per hour, then reversed, then kept you hanging at the top before dropping again. We were going to get a little vid of them on the ride, but of course, my camera battery died. The only shot we got were the seats. Boo!

My sister and her fam went for pancakes since they didn’t eat lunch, so JD, my parents and I decided to play a little black light indoor mini golf. It was a lot of fun, despite my mom almost getting smacked in the head by a 6-year-old boy’s flying golf ball! We all had a good laugh about it after she screamed and ducked. :) The mini golf place had a snack bar, so I got a small scoop of my absolute favorite ice cream — mint chocolate chip — and JD indulged in a chocolate funnel cake. The smell alone was worth savoring!

On the way back to the cabin, I of course fell asleep in the car. And when I woke up, JD had two bags of wavy Lay’s chips and dip before my eyes. Why did Dad have to stop at the gas station?! I had been craving salty potato chips for days, and I thought I could just have a few and be satisfied. Did it work out that way? N-O. The hibernous bear I’ve become was hungry, and boy, did I eat! I munched on some of the plain variety in the car. Then some more of the plain variety with dip at the cabin. A barbecue flavor appeared that my sister bought, and I had some of those too. Oh, and did I mention the tortilla chips that also graced the table? It was a chip nightmare, and for some reason, I couldn’t wake myself up. I probably had a combined amount equal to at least a bag, and I didn’t feel good at all after I was burping potatoes and feeling grease practically pouring out of me. I decided then and there that I would not eat like that again. It’s not good for me and definitely not good for the baby. And do I really want to reverse months of work for some measly chips? No way!

So on Day 4, the day we packed up and traveled home, I put the gluttonous incident behind me and made good choices for all three meals, (which I don’t have pics of since the camera battery was still sleeping) tracked everything in Babyfit.com and drank lots of water. I kept that momentum going today, and even got in a 40-minute workout to boot. I’m starting to feel like my old self again (although sleepy bear is not far behind. Yawn.)

I can’t believe tomorrow is the last day of 2009! This year has gone by so fast. Do you have fun New Years plans? I’m going to be boring and stay home, curl up on the couch with the husband and pup, and watch the ball drop on TV. Oh, and probably fall asleep by 9. :)
