‘It’s kind of like Eggs Benedict…’

“…but without the sauce. And the English muffin.” That’s what my sweet husband proudly told me Saturday morning after presenting me with this breakfast (after I finished a 30-minute elliptical workout).

Let’s forget there is also no Canadian bacon, which would be another main component of said recipe. But hey, when a handsome man makes you a meal, there’s no need to speak up. :) My “eggs benedict” was delicious, and the perfect start to a busy day, along with this half of a grapefruit.

I heart fruit.

JD and I had some important Christmas shopping to do for our three sweet nieces, and a tree to find and decorate! The store aisles were so congested with shoppers, it was hard to look at anything that was left on the shelves after Black Friday madness. We somehow still found some cool gifts for the girls, although the Zhu Zhu hamsters were long gone to other homes. :( What is it with these things?! I mean, it is cheap faux fur that moves. Anyone out there have little ones adding a Zhu to their wish list? Good luck finding one! :)

The perfect present hunt stirred up our appetites, so we headed to Logan’s (a big chain restaurant in our area) for a quick lunch — salad for me, nachos for JD.

Iceberg lettuce, shredded cheese, bit o' bacon bits, tomatoes, egg (I took the yolks out), and two grilled shrimp and veggie skewers. Dressing was bleu cheese on the side.

After refueling, we went out to find a Christmas tree — an artificial one, that is. :) Last year, we opted for three little trees instead of one big one, but this year, I had to have the real deal. Target had the perfect one for us, and we went right home to pull all our decorations out of the attic and decorate it. It’s beginning to look a lot like Christmas ’round here!

Dinner was more leftover turkey and green bean casserole — all portioned and calorie calculated — and enjoyed in front of the tube and a beautifully lit tree. Happiness.

Sunday’s breakfast was more eggs…my staple on the weekends!

I also had two pieces of Ezekiel toast — the perfect “scoop” for eggs. JD’s family had their annual reunion Sunday, so lunch was a big to-do with tons of food. Chicken fingers, turkey, stuffing, mac n cheese, pie, me oh my! Since I already had my big eating day on Friday, I tried to keep my plate light with small spoons of mostly veggies — green beans, sweet corn, and green and black-eyed peas. I did, however, have a little sample of the mac n cheese, and a two-bite sausage muffin. It was worth all 132 calories! Dessert was a plenty, but I left it off my plate. The muffin was the perfect meal ender all on its own.

When we got home, I did another session with Sassy Sarge. Only this time, I upped it to 40 minutes instead of 30. It was tough, per usual, and I can already tell my legs are going to be sore in the morning. I finished up my workout with two kinds of crunches, and a 20-minute cool down walk with JD and the pooch. Hopefully, that at least erased my muffin. Hee Hee.

Dinner was more leftovers — beef stew and sent-home sandwiches from today’s family lunch. I added spinach to this meal too — I’m trying to eat it up since the expiration date on the bag is fast approaching!

It’s getting waaayyy too late, so I guess I better head to bed. I hope everyone has a wonderful, healthy week!

Old enough to know better

Tonight was volleyball night, (the hubs and I play on a city league) and I was a little later than I liked getting home from work. We usually leave around 5:30 to get to the gym in time to warm up for our games (2 teams, 6 matches total), and by the time I parked the ol’ Corolla and walked in the door, it was already 5:15. Rush! I hurriedly put on some workout pants and a T-shirt, grabbed my sneaks and we went on our way. Guess what I forgot? To eat! I had a big salad for lunch, so I really wasn’t feeling hungry. But by the time we starting hitting the ball around, the tum was a rumbling! Then when the games started, I was getting shaky and light headed…not good! I’m giving myself a hard slap on the wrist for not fueling up every few hours today. Despite my bad food behavior, I had some pretty awesome hits tonight, if I do say so myself. :) I got 6 or 7 points in a row serving. We won’t talk about my inability to set a ball though. Hee Hee…

Dinner this p.m. was another quick one since I was turning into a grouchy bear by the second.

Two slices of toasted Ezekiel bread, 2 slices Muenster cheese, 2 free-range eggs and a great big bowl of spinach, tomatoes and okra. I’m feeling better already! (Please excuse the ugly egg on the right…my flipping was completely off on that one!)

Tomorrow we are having a party at work to celebrate our Flickr and Facebook hits — 1 million, baby! Things like this, while fun, always make me feel a bit anxious. There’s so many food options, and quite frankly, most of them aren’t the healthiest of eats. I try to load my plate with any fruit or vegetable I see, then maybe a small spoon or two of the dishes I really want to try. (I can pass up rolls no problem, but cheese dip?! I have no limits.) Or, I’ll get one thing, then eat the lunch I brought. But even with my best intentions, I feel like I need a sign like they have outside of hospital rooms for women who want to have natural births — “Do not ask this person if they want medication.” Except mine would say, “Do not ask this very determined and hard-working woman why she is not sampling most of the buffet, or give her the usual ‘everyone needs to splurge once in awhile’ speech, or shoot her dirty looks for not trying your mouth-watering fried chicken and to-die-for banana pudding. Thanks for your cooperation.”

This is just the beginning of “eating season,” (my birthday next week, Thanksgiving, Christmas, the list could seriously go on and on) but I just have to plan, portion and pray away! :)
