A very bridal breakfast

Today, we threw Jessica a surprise bridal breakfast at work, and let me tell you, the food was not scarce. Egg and sausage casseroles, mini chicken biscuits, fruit salad, veggie quiche and Lori’s mom’s famous pumpkin bread were just some of the many eats laid before our very hungry eyes.

This was only, oh, a third of the breakfast delights we had!

I had a spoon of several of the items, and before I knew it, my plate was full. I ♥ breakfast too much! I could have just thrown in the towel and declared it a no calorie counting day, but I remembered something Jillian Michaels said:

“When you are driving down the freeway and get a flat tire, you don’t pull over and slash the other three do you? NO! You fix the flat tire and move on!”

Well said, Miz Michaels! So, I “drove away” from my heavy a.m. meal, tracked the calories as best I could on Sparkpeople.com (it’s hard to know when someone makes a dish, rather than buy it) and split the difference between lunch — leftover lentil soup — and dinner. I packed an apple for lunch as well, but got full and saved it as a topper for tonight’s salad:

Apple, assorted veggies, 2 tablespoons hummus

That was eaten with this:

One Earthgrains 100% Natural Thin Bun topped with 3 scrambled egg whites, spinach and mushrooms

I made sure to get in a good workout as well to burn off some of those breakfast calories. Jillian’s Shred AND a 40-minute session with Sassy Sarge on the EA Active Personal Trainer for Wii. My body is so tired, but I feel good to have pushed the muscles a bit more than usual. (I may not say that in the morning when I can barely move. Ha Ha!) So with planning and pumping iron, I was able to have my mini chicken biscuit and eat it too. :)

Tomorrow is weigh-in day, so please send all your good vibes my way. I don’t need a gain before being part of this  happy bride’s wedding on Saturday!

Marathon Meg

Tonight, I completed a marathon…an EA active one, that is. :) I had all intentions of going to a gym up the street from us for a BodyPump class, (I got a free one-day pass at a work health fair awhile back) but traffic put the brakes on that idea. So, I opted for Plan B — another Wii EA Active Personal Trainer workout. I’m still sore from Sunday’s 40-minute session! I scrolled through all the workouts, and stumbled across the “Big Daddy” of the bunch — the 51-minute marathon. That’s 42 exercises, including lots of running, squats that made my legs burn so much I needed a fire extinguisher, inline skating with jumps, arm work and oh so much more. I was heaving and pouring sweat by the time I crossed the virtual finish line on the track — my last exercise of the session. I seriously wanted to quit about halfway through, but I didn’t. And I’m really proud of that. I’ve come a long way in four months!

I’m also glad that I stayed in my calorie range today with these tasty meals and snacks:

Breakfast -- the other half of yesterday's smoothie

Lunch -- salad with baked tilapia, feta cheese and fat-free raspberry vin

Snack #1 -- a lovely tangerine

Snack #2 -- Wasa cracker smeared with one tablespoon natural PB

Dinner -- PIZZA! 1/3 of a California Pizza Kitchen sicilian pie (only 310 cals) plus side salad with one tablespoon Sabra hummus

Even after all this food, I was still under my calorie range for the day. What?! So, I fixed that with a bag of 100-cal popcorn.

Sweet + Salty...yum!

I’m going to try with all my might to get up early in the morning to work out. Tomorrow night, I’m having a gals dinner with my dear friend, Sara Ashly, and I don’t want to cut the catching up short to get home to exercise.

‘It’s kind of like Eggs Benedict…’

“…but without the sauce. And the English muffin.” That’s what my sweet husband proudly told me Saturday morning after presenting me with this breakfast (after I finished a 30-minute elliptical workout).

Let’s forget there is also no Canadian bacon, which would be another main component of said recipe. But hey, when a handsome man makes you a meal, there’s no need to speak up. :) My “eggs benedict” was delicious, and the perfect start to a busy day, along with this half of a grapefruit.

I heart fruit.

JD and I had some important Christmas shopping to do for our three sweet nieces, and a tree to find and decorate! The store aisles were so congested with shoppers, it was hard to look at anything that was left on the shelves after Black Friday madness. We somehow still found some cool gifts for the girls, although the Zhu Zhu hamsters were long gone to other homes. :( What is it with these things?! I mean, it is cheap faux fur that moves. Anyone out there have little ones adding a Zhu to their wish list? Good luck finding one! :)

The perfect present hunt stirred up our appetites, so we headed to Logan’s (a big chain restaurant in our area) for a quick lunch — salad for me, nachos for JD.

Iceberg lettuce, shredded cheese, bit o' bacon bits, tomatoes, egg (I took the yolks out), and two grilled shrimp and veggie skewers. Dressing was bleu cheese on the side.

After refueling, we went out to find a Christmas tree — an artificial one, that is. :) Last year, we opted for three little trees instead of one big one, but this year, I had to have the real deal. Target had the perfect one for us, and we went right home to pull all our decorations out of the attic and decorate it. It’s beginning to look a lot like Christmas ’round here!

Makes me want to sing some carols! I love this time of year!

Dinner was more leftover turkey and green bean casserole — all portioned and calorie calculated — and enjoyed in front of the tube and a beautifully lit tree. Happiness.

Sunday’s breakfast was more eggs…my staple on the weekends!

Two free-range eggs, scrambled, with a handful of fresh spinach.

I also had two pieces of Ezekiel toast — the perfect “scoop” for eggs. JD’s family had their annual reunion Sunday, so lunch was a big to-do with tons of food. Chicken fingers, turkey, stuffing, mac n cheese, pie, me oh my! Since I already had my big eating day on Friday, I tried to keep my plate light with small spoons of mostly veggies — green beans, sweet corn, and green and black-eyed peas. I did, however, have a little sample of the mac n cheese, and a two-bite sausage muffin. It was worth all 132 calories! Dessert was a plenty, but I left it off my plate. The muffin was the perfect meal ender all on its own.

When we got home, I did another session with Sassy Sarge. Only this time, I upped it to 40 minutes instead of 30. It was tough, per usual, and I can already tell my legs are going to be sore in the morning. I finished up my workout with two kinds of crunches, and a 20-minute cool down walk with JD and the pooch. Hopefully, that at least erased my muffin. Hee Hee.

Dinner was more leftovers — beef stew and sent-home sandwiches from today’s family lunch. I added spinach to this meal too — I’m trying to eat it up since the expiration date on the bag is fast approaching!

Meg Makes It On Monday: Breakfast Salad

I had all intentions of making a recipe my sister, Tiffany, sent me for “Meg Makes It On Monday” — teriyaki turkey burgers. My mouth is watering just reading the ingredients! I needed a few things from the store to make them, (does anyone keep ginger root in the house?) but by the time I got home from work, did a tough workout (more on that in a minute!) and ran a few other errands with JD, it was almost 8:30. In the interest of time, we decided to skip the store and save the burger recipe for another night. (Thanks for sending it, T!)

We had a whole carton of eggs in the fridge, so the husband offered to make some scrambled style, mixed with a few pieces of thin-sliced turkey. Salad ingredients are a plenty right now in our kitch after my birthday party, so I thought I’d do my own version of a chef salad, but a little more “breakfast” style with the eggs.

From this…

…to that!

Into the bowl went:

  • two handfuls organic salad mix
  • three mini bell peppers, sliced (red, orange and yellow)
  • about a half a cup’s worth of sliced mushrooms and cucumbers
  • 1 tablespoon Hormel real bacon bits
  • 1 kid-size box Sunmaid craisins
  • 4 tablespoons Maple Grove Farms fat-free raspberry vinaigrette
  • 2 tablespoons Athenos feta cheese with basil and tomato

All this, topped with organic, cage-free eggs (one whole and 2 whites), and turkey (three pieces), was just shy of 400 calories. I love mixing hot and cold components together in salad, and the sweet/salty flavors complimented each other perfectly. So, what came first…the chicken or the veggie? :)

Moving on to my workout…I decided to go back to the virtual world and visit an old friend…Sassy Sarge! Remember her? I haven’t done an EA Active Personal Trainer workout since the great tendonitis incident of 2009. But, after several months of working out and getting my legs stronger, I thought I’d give it another chance. I was looking for a challenge, and I certainly got one with the 30-minute custom workout, level “hard.” And hard it was! The inline skating with jumps was probably the worst…my legs were screaming for mercy! I don’t think I have ever sweat that much from a workout…not even Jillian’s Shred gets my heart rate up that high.

Running, baseball, dancing and more strength training also made up this workout…it was tough!

It’s late…my legs are burning already…so I’m going to follow my hubby and puppy to bed! Goodnight, and have a fantastic Tuesday!
