Hey, all! How’s your weekend going? I hope great! As for me, I’ve had a tough few days dealing with headaches. Argh! I’m trying not to take any medications, even though I’ve read Tylenol is safe for preggs like me, but I couldn’t reach my doctor yesterday to verify that. So I kept it natural with frozen bags of veggies on my head. Ha! The cold stuff didn’t work too well, so I just rested in a completely dark and quiet room, and eventually fell asleep. I think that must have done the trick, because today I’m feeling so much better! I hope it stays that way.

I woke up super early and hungry this morning, and gobbled down some peach Chobani yogurt while getting sucked into the show, “Disappeared.” Have you seen it? It’s about real missing persons cases. Very interesting, but so sad too! I can’t imagine what those families are going through.

I made a big breakfast a couple of hours later for me and the hubs. It was french toast drizzled with honey, pan-seared prosciutto and sliced pineapple. It was very filling, and I couldn’t finish it all. So delish though!

After some house sprucing and blog reading (have to catch up with all my fav ladies), I got my workout on with Denise Austin’s Fit and Firm Pregnancy DVD. I did the 20-minute cardio session, plus the 20-minute toning workout. It felt so good to get moving!

JD and I started preparing dinner before lunch. :) We decided to try a recipe for Italian-style pulled pork (we subbed beef since it was on sale) from a paperback slow cooker recipe book I picked up at the grocery store.

Can’t go wrong with Sandra Lee on the cover! :)

Tex was desperately hoping JD would drop a morsel of the meat he was cutting up on the floor. Ha Ha!

“Gimme some beef!”

Here’s what it looks like, with all the ingredients together. (Wish I could share the recipe, but don’t want to infringe on any copyright laws!) We’ve had it cooking for several hours now, and my mouth hasn’t stopped watering from all the scrumptious smells coming from the crockpot. Can’t wait to dig in later!

Lunch was simple but HOT!

I was in a noodle kind of mood, so I fixed a Lipton Pasta Sides (chicken flavor) and a salad with lots of hot salsa on top. And hot it was! My nose was running, and my tongue needed some serious extinguishing after a few bites. I mixed in a little sour cream to try to cool it down, but my mouth was still ablaze. An orange Popsicle and copious amounts of water did the trick. :)

JD and I are going to an auction in a bit with my parents. You can find some great deals at those! (Like the china cabinet I got for a steal a few months ago!)

Meg Makes It On Monday: Husband Edition

Exhausted. Stressed. Hungry. I was all of those today — times a bazillion! I think the hustle and bustle of Jessica’s wedding weekend waited until today to send me into sleepy submission. And while my newly married friend is probably lounging on the beaches of Jamaica and eating steak and lobster, I was scurrying between my cubicle and hers, answering e-mails, shaking the dust off my design skills to put our weekly newsletter together (Fun fact about me: my first job out of college was a copy editor/page designer for a daily paper), and all around trying to fill the editor shoes that Jessica so easily puts on every day. Oh, and get my own job done along with all that. (Another fun fact: We work in communications  in case you were wondering.) :)

I was very ill prepared for such a time-crunched day. While I did pack breakfast, I figured I could go grab Subway or something for lunch since I was (of course) running late this morning. FAIL. Before I realized it, it was 2 p.m., and I hadn’t eaten anything since my 8 a.m. yogurt bowl. DOUBLE FAIL. (Although the peach Chobani was a success — very tasty!)

Loved the peach pieces! My usual banana and Kashi GoLean were in the mix.

So figuring it was too late to get something, my lunch (gasp!) came out of the vending machine. Oh, the horror! It was a pack of peanut butter crackers, and no veggies or real nutrients left me feeling cranky panky! I think my husband could tell I was in NO mood and had zero energy to cook for Meg Makes It On Monday (could have been the fact I was draped across our couch for a good hour), so being the absolute sweet man he is, fish, sweet potatoes and English peas were soon prepared and placed before me. What a guy!! I did get somewhat creative with the tilapia and made a terrific sandwich with it that I may eat again for lunch tomorrow. (I’m swearing off any further emergency trips to the vending machine, no matter how busy I am. Scouts honor.)

This is an Earthgrain thin bun, 1 tablespoon feta cheese, 1 tablespoon avocado, 4 ounces tilapia, spinach and a teaspoon of light mayo. Complimented with a cup each of peas and sweet potato fries (Can you tell we like those?) Simple, mood-boosting deliciousness!

I felt completely better after this meal! So much better in fact, that I got in my very first running training session. :) We took the dog out for his usual 2-mile walk, and I thought I’d take advantage of the warmer temperatures and hit the pavement in preparation for my very first race in February. I didn’t follow a running program for this one. I just mixed walking with 2- and 3- minute increments of  jogging. Before I knew it, I had 15 minutes under my belt! I was so proud — pretty good for a first-timer, don’t you think? :) I checked out the Couch to 5k Program online when we got home, and I think I’m only supposed to run for 60 seconds, then walk 90 seconds for a total of 20 minutes. I ran almost double that (I’m seriously shocked!) but I will probably follow their regimen from now on. I don’t want to do too much too soon. (I’ve already gone through the repercussions of that!)

I’m off to catch up on blogs and then get some rest. I have a feeling tomorrow’s going to be a doozie! :) Night, night!

Meg Makes It On Monday: Smoooothie

So, I have a confession to make: I’m a pretty big bore when it comes to breakfast. Did you know this already? :)

If you keep up with my blog, you know I ♥ my yogurt bowls. About 99 percent of the time, my bag of eats that I take to work every day consists of: a banana, a Tupperware of Kashi GoLean cereal and a container of Chobani yogurt. It’s a great blend of protein and carbs and quick to put together when you stay in bed too long like I tend to do. But if variety is the spice of life, I think my a.m. meals need a big heaping spoon dash of salt! :)

So, I decided to be a bit of a copycat and try something I’ve seen on many blogs I read — a protein-packed smoothie. I was a bit hesitant — would thickish liquid truly fill me up? Would I be hungry 20 minutes later and attack the snack machine? Could I go a morning without my beloved Chobani? I’ve had smoothies before, but usually they were the chocolate variety that has a day’s worth of calories in, oh, a couple sips. :) But, no worries. My green-tinted shake kept my tummy full and snarky hunger monster in timeout until lunch. And I may or may not have snuck my favorite yogurt in the mix. :)

Here’s the magic potion:

Eight tablespoons organic Living Harvest Hemp Protein powder

Two more-brown-than-yellow bananas

Two cups Silk soy milk. Regular or Hemp milk could also be used.

Two handfuls of spinach -- couldn't even taste it!

One container Chobani plain yogurt -- old habits die hard. :)

Throw everything into a blender

Done!

A bubbly breakfast delight!

I actually split this into two containers, so I have an extra for tomorrow. Calories equal about 385 for 15 ounces. Delish!

Off to watch “Four Christmases.” I’m a big fan of Reese Witherspoon, so I hope she doesn’t disappoint. :)

Twas the night before Thanksgiving

Happy Thanksgiving Eve! Is everyone readying their turkeys and — as many of my Southern friends say –  “fixins”? My job every year for our family Thanksgiving is to make the green bean casseroles (one regular, one gluten free for mom), so JD and I braved the crowds at the grocery store to get all the ingredients. I’m so glad we did! We went to Publix instead of our usual market since they are one of the few places that carry Progresso cream of mushroom soup (the only brand that is truly GF), and I found TWO new-to-me kinds of Chobani — blueberry and peach. I nearly skipped down the aisle! I may not be able to wait until breakfast to try them out. :)

(Yes, I have a Chobani obession. And no, I’m not going to do anything about it.)

But back to Thanksgiving…since JD’s fam lives about an hour away from us, we usually spend Thanksgiving Day with them, and the day after, (instead of braving the insanity known as “Black Friday”) we have a second feast with my family here in town. That’s a lot of good eatin’! This year, though, even with my nutritionist’s permission to have at the turkey and dressing without calculating the calories, I don’t want to have to put on drawstring pants and sleep away the afternoon from food overload. I’ve read several articles and blog posts today that gave great tips on enjoying the holiday without it enjoying your derriere, and I’ve devised a plan of action (one of the recommendations) to help me through the next two days of celebration.

  1. I’m going to do a hard-core workout in the a.m. before we leave for JD’s grandparent’s house. I got in a good sweat session tonight as well — 20 minute Shred, followed by 20 minutes of cardio challenge on the elliptical. My legs are still burning! I’m not sure what tomorrow’s exercise will be, but I want to be drenched by the end of it. :)
  2. I will be drinking copious amounts of water. Gallons. Barrels even.
  3. Portion, portion, portion. I’m getting pretty good at eyeballing things to know how much I’m eating. (Fist is a cup, deck of cards is a good size for meat, etc.)
  4. I’m skipping dessert one of the days. I don’t think having a slice of pie or piece of pumpkin bread (which I bought from Lori’s mom today…the smell alone is making my mouth wata!) is taboo, especially on a holiday, but since I don’t have a raging sweet tooth,  I would rather bank those calories on an extra helping of JD’s mom’s sweet potato casserole or my mom’s mashed potatoes and gravy. They are just that good. :)

Oh, I almost forgot two things in light of all this turkey talk: my weigh in, and tonight’s fabosh stew. I stepped on the scale this morning, and I was down a half a pound. I’m a little disappointed I didn’t meet my goal of 1.5, but hey, it is still a loss! Here’s me, three total pounds lighter:

I was in a meat and potatoes kind of mood tonight, so JD and I put together a beef stew packed with all sorts of veggies. We almost had to get a bigger pot!

This included, but was not limited to, grass-fed, hormone-free beef tips, mushroom caps, corn, baby carrots, green bell pepper, diced tomatoes, and potato chunks simmered in fat-free, 50 percent less sodium Swanson beef broth. A few spices — S&P, oregano, garlic, onion powder and basil — were stirred in throughout the 40-minute cooking process. It was stewerrific! (And less than 450 cals for 2 whole cups!)

Served with a warm piece of Ezekiel bread for dipping. Growing up, my mom always had a crusty French roll or a slice of sourdough to go with soup. It doesn’t taste quite the same without it!

I guess I better get some sleep before the festivities begin tomorrow. I hope everyone has a wonderful, fun-filled holiday!
