Welcome to the Jungle

Good morning! How is everyone’s Sunday starting out? Even with my best intentions to sleep in this morning, I couldn’t keep my eyes shut past 7:30. Looonng sigh. I relented to the morning sun beating on our windows, got up and headed to the kitchen to crack a few of these for the husband and I’s breakfast:

The incredible. The oh so edible. Egg.

JD wanted an egg sandwich, but  I decided to keep my whole wheat toast on the side and incorporate some of last night’s veggies into my breakfast. Presenting:

A delicious zucchini and squash scramble! Topped with salsa and cilantro, and consumed in about 2 seconds. Ha ha! While I do like scrambled eggs (especially my Dad’s — he’s the morning meal master), I really do miss overeasy style. Runny yolks dipped in toast (sour dough, preferably) just do something for me. That’s another thing to add to the post-pregnancy wish list. :) What’s your favorite way to fix eggs?

Going back to the topic of veggies, remember the little garden we decided to grow? Well, it has gone from this:

I’m just waiting for an anaconda to slither out of this jungle. Beastly!

The squash plants are definitely taking the lead in the growing race. I love the petals — so pretty! I can’t wait to just walk outside and pick something for dinner. Most of our crop should be ready for harvest in the next couple of weeks. Except the tomatoes…they are taking their sweet time to sprout. Come on, boys!

Tex could care less about the garden — veggies make him gag.

I guess I should get myself ready for church. We are having a potluck with our neighbors this evening, and hopefully, we can fit a long walk on the Greenway in this afternoon. My friend, Steph, took some awesome maternity pictures for us yesterday, and said she may have a few sneaks on her blog today. I’m sure I’ll be stalking the computer for those too!

Veggie comeback

As the weeks go on, I am slowly but surely starting to like vegetables again. Cooked ones are still on my uh-uh list (especially my old friend, broccoli), but raw seems to be getting the thumbs up from the baby. :) Another thing the baby likes? TEMPEH! I tried the coconut curry flavor last night, and it was beyond delish. Now I know what all you bloggers are talking about!

I cooked six strips in a little bit of olive oil, and made a tasty wrap with them that included, yes, vegetables! :)

Along with the tempeh, I had cucumbers, tomatoes, melted cheddar cheese and 1 tablespoon Sabra plain hummus on a sun-dried tomato Flatout Flatbread. So, so good!

Vegetables also made a big appearance in today’s meals. Jessica, Lori and I got takeout from Nothing But Noodles today for lunch, but knowing I was going to have pasta for dinner, I skipped the noodles and ordered a spinach cranberry salad with grilled shrimp and a cup of tomato bisque soup (which I only ate half of — Jason’s Deli soup is way better!) I lapped up that salad though — it was the perfect sweet/salty combination with sliced walnuts in the mix. I also splurged a bit and had a couple of breadsticks. (Bread is my weakness) The best part of lunch though was that 25 percent of today’s proceeds at Nothing But Noodles went to Haiti relief efforts. Can’t beat that!

My sweet husband made a wonderful dinner tonight while I napped on the couch.

This is angel hair pasta with meat sauce and a big salad with a tablespoon of light raspberry vinaigrette. The sauce had grass-fed ground beef and was full of mushrooms, green pepper and onions — and these cooked actually tasted good! Secret must be in the sauce.

I have gotten in some exercise the past few days as well. Yesterday, I did 30 minutes on the elliptical while reading the latest issue of US Weekly. Today, Jessica and I walked the stairs to the 10th floor of our building. Our legs were so shaky coming back down!

I’m about to get on the elliptical again to get a little extra exercise in for the day. I should sleep really good tonight!
